Ingredients

2 kgReal Good Chicken
225 gmonions, roughly chopped
3 tbspolive oil
8 clovesgarlic, peeled
1red pepper, blanched and diced
1green pepper, blanched and diced
350 gmbrinjals, cut into thick roundels
½ tspthyme
½ tspdried marjoram (or basil)
200 mldry white wine
1 loaffrench bread stick
As requiredsalt
A pinchpepper
Here is a mouth-watering recipe for Baked Chicken with Garlic And Vegetables.
  • Step 01

    Pre heat oven till 230° C/ 450° F. Joint the chicken with skin and cut into 8 pieces. Spread onions over the bottom of large roasting tray and pour just enough olive oil to coat them. Put them in an oven for 5 minutes. Remove.
  • Step 02

    Put the whole garlic cloves in tray. Season with salt and pepper and arrange the chicken pieces, skin side up in the tray. Surround with peppers and herbs.
  • Step 03

    Arrange brinjals around the edge. Drizzle all over with olive oil. Cook in the pre-heated oven for 20 minutes. Baste occasionally with oil and bake further till chicken is done and vegetables are browned on the edge.
  • Step 04

    Transfer the contents of the tray into a serving container. Keep it warm. After that, drain the fat on the baking tray and pour wine and heat for few minutes. (Deglaze). Whisk in the olive oil and pour this on the chicken.
  • Step 05

    Heat the bread in an oven, cut in slices. Eat with whole garlic cloves (that have been cooked with the chicken) pressed into the bread along with the chicken.
