|225 gm||onions, roughly chopped|
|3 tbsp||olive oil|
|8 cloves||garlic, peeled|
|1||red pepper, blanched and diced|
|1||green pepper, blanched and diced|
|350 gm||brinjals, cut into thick roundels|
|½ tsp||dried marjoram (or basil)|
|200 ml||dry white wine|
|1 loaf||french bread stick|
Step 01Pre heat oven till 230° C/ 450° F. Joint the chicken with skin and cut into 8 pieces. Spread onions over the bottom of large roasting tray and pour just enough olive oil to coat them. Put them in an oven for 5 minutes. Remove.
Step 02Put the whole garlic cloves in tray. Season with salt and pepper and arrange the chicken pieces, skin side up in the tray. Surround with peppers and herbs.
Step 03Arrange brinjals around the edge. Drizzle all over with olive oil. Cook in the pre-heated oven for 20 minutes. Baste occasionally with oil and bake further till chicken is done and vegetables are browned on the edge.
Step 04Transfer the contents of the tray into a serving container. Keep it warm. After that, drain the fat on the baking tray and pour wine and heat for few minutes. (Deglaze). Whisk in the olive oil and pour this on the chicken.
Step 05Heat the bread in an oven, cut in slices. Eat with whole garlic cloves (that have been cooked with the chicken) pressed into the bread along with the chicken.
