Ingredients

8 cupschicken stock
2 mediumpotatoes
1leeks
1 bundlespinach
1 tbspgarlic paste
½ tspwhite pepper powder
As requiredsalt
¼ cupmilk
½ cupReal Good Chicken, boiled and shredded
Here is a delicious recipe for Caldo Verde.
  • Step 01

    Strain the stock. Peel and cook potatoes in the stock till tender and they begin to break-up.
  • Step 02

    Wash and blanch the spinach. Slice leeks thin. Add to soup.
  • Step 03

    Season with salt, add pepper and garlic.
  • Step 04

    Add spinach, chicken and milk before serving.
Chef’s Tip

After blanching the spinach, keep in cold water to retain its colour.
