|4 (200 gm each)||Real Good Chicken Breasts (large)|
|1 tsp||white pepper powder|
|10 gm||chopped parsley|
|6 cloves||garlic (crushed)|
|4 tbsp||seasoned flour with a pinch of salt and pepper|
|100 gm||dry bread crumbs|
|A pinch||salt and pepper|
|For deep frying oil|
Step 01Trim and clean chicken breasts. Leave the bones on (from the winglets). Season with salt and pepper.
Step 02Mix parsley, garlic and butter with a spoon. Shape into four even ‘fingers’ and chill till hard in the freezer.
Step 03Flatten the chicken breast till quite thin. Place one finger of the mixture and fold flesh on the top. Dust with flour and seal.
Step 04Dip in beaten eggs, then coat evenly with bread crumbs and chill thoroughly in the freezer for 10 to 15 minutes. Remove from the freezer and dip in the egg wash and the breadcrumbs once again to ensure that there are no cracks.
Step 05Chill once again in the freezer for another 15 minutes at least. Heat sufficient oil in a large and deep pan.
Step 06Deep fry the chicken parcels making sure they are completely immersed in hot oil, till the outside is crisp and golden brown. Reduce the flame, to make sure the chicken gets cooked from the inside.
Step 07Serve immediately with creamed potatoes.
