Ingredients

1Fry Real Good Chicken, washed, skin removed, cut into pieces, dried
8soft prunes, pitted and cut up
4pineapple slices, halved
2 mediumonions, thinly sliced
1red pepper, minced
1 clovegarlic, crushed
1 cupuncooked rice
½ cupalmonds, toasted slivered
½ cupwhite wine
¼ cupsoya sauce
5 tbspbutter
4 tbspcoriander leaves, minced
1 tspcurry powder
1 tspfresh ginger, minced
¼ tsppepper
As requiredseasoned flour
1lemon (juice)
Here is a delicious recipe for Chicken Hawaiian Style.
  • Step 01

    Combine soya sauce, wine, lemon juice, garlic, curry powder, ginger, coriander leaves and pepper. Pour over the dressed chicken and marinate for several hours, stirring often. Heat 4 tbsp. butter and stir fry onions until golden. Drain and reserve.
  • Step 02

    Dry and dredge the chicken with seasoned flour. Brown in the remaining oil in the pan. Add onions and the liquid from the marinade. Cover and steam cook for 45 minutes, uncovering pan for the last 15 minutes.
  • Step 03

    Meanwhile, cook and drain rice and keep hot. Heat 1 tbsp. butter and brown pineapple slices. Add ¼ cup wine to the butter. Heat well and drain the fruit and reserve.
  • Step 04

    Serve the liquid as a sauce. To serve, mix rice, almonds, prunes, and stir-fried red pepper.
  • Step 05

    Arrange on a plate. Arrange chicken pieces with their sauce and pineapple slices around the rice. Pour pineapple sauce gently over the chicken. Serve hot.
