|500 gm||Real Good Chicken Liver|
|¾ tsp||nutmeg, freshly grated|
|⅛ tsp||pepper, freshly ground|
|4 tbsp||clarified butter|
|For serving whole-wheat toast|
Step 01Heat butter in a saucepan and add the chicken livers to it, cook till they are done and the flesh does not appear pink. Add brandy and season with salt and pepper. Add nutmeg and mix well.
Step 02Remove the liver pieces and blend them in a food processor, adding a little melted butter, till the mixture is smooth. Strain if you want an extremely smooth paste. Use a fine strainer or a muslin cloth.
Step 03Place this mixture in a small serving bowl and flatten the top with a knife. Spoon a little melted butter over the mixture and chill this for at least 2 hours.
Step 04Serve with small squares of whole-wheat toast.
