|800 gm||Real Good boneless chicken breasts|
|100 ml||light soya sauce|
|50 ml||Japanese rice wine or dry vermouth|
|50 ml||saké or dry sherry|
|50 gm||castor sugar|
|1” piece||ginger root|
|8||spring onions (white and green)|
|2 tbsp||toasted sesame seeds|
|16||bamboo satay sticks|
Step 01Put peeled ginger and garlic in the processor and grind coarsely. Add the soya, rice wine, saké, oil and sugar. Mix well.
Step 02Marinate the chicken pieces in the marinade, preferably overnight.
Step 03Peel and cut the spring onions into quarters.
Step 04Soak and drain the skewers, then thread the chicken and the spring onion pieces. Sprinkle the toasted sesame seeds on the chicken.
Step 05Cook on a medium grill or oven until the chicken is cooked.
Step 06Transfer the remaining marinade to a pan and allow to boil for about 5 minutes or till it becomes syrupy.
Step 07Coat the chicken lightly with the marinade and serve hot.
