|1 ½ kg||Real Good Chicken, cut into serving pieces (use an older bird)|
|4 tbsp||olive oil|
|freshly ground pepper|
|200 gm||button mushrooms, sliced|
|For the Marinade|
|3 cups||red wine|
|2 cloves||garlic, chopped|
|1 tsp||whole black peppercorns|
Step 01Cook the marinade ingredients, for 15 minutes. Transfer into a bowl and let it cool. Add the chicken. Put half the oil and marinate overnight. Remove the chicken and strain the marinade.
Step 02Heat the remaining oil in a deep-bottomed pan, add the chicken and sauté until brown. Remove from flame.
Step 03Sprinkle the chicken with flour, add the remaining ingredients besides mushrooms and stir over a medium flame for a few minutes.
Step 04Add the marinade to the chicken and bring to a boil.
Step 05Transfer this container into an oven and cook for an hour (350° F). Within 30 minutes, take out the container and add the mushrooms. Continue to cook till the chicken is done.
