1 ½ kgReal Good Chicken, cut into serving pieces (use an older bird)
4 tbspolive oil
1 tbspflour
250 gmcarrots
1onion, chopped
2bay leaves
As requiredsalt
freshly ground pepper
200 gmbutton mushrooms, sliced
For the Marinade
3 cupsred wine
1carrot, chopped
1onion, chopped
2 clovesgarlic, chopped
1 tspwhole black peppercorns
Here is a delectable recipe for Coq Au Vin.
  • Step 01

    Cook the marinade ingredients, for 15 minutes. Transfer into a bowl and let it cool. Add the chicken. Put half the oil and marinate overnight. Remove the chicken and strain the marinade.
  • Step 02

    Heat the remaining oil in a deep-bottomed pan, add the chicken and sauté until brown. Remove from flame.
  • Step 03

    Sprinkle the chicken with flour, add the remaining ingredients besides mushrooms and stir over a medium flame for a few minutes.
  • Step 04

    Add the marinade to the chicken and bring to a boil.
  • Step 05

    Transfer this container into an oven and cook for an hour (350° F). Within 30 minutes, take out the container and add the mushrooms. Continue to cook till the chicken is done.
