1-1.25 kgReal Good Chicken, jointed and skinned
4bay leaves
3 tbspsalt
1/3 cupvegetable oil
5lime (juice)
8 mediumonions, finely chopped
3 tbspgaram masala powder
5-6 clovesgarlic, finely chopped
3 tbspred chilly powder
½ cupvinegar
¼ cupginger
½ tspsugar
Here is a lip-smacking recipe for Degchi Murgh.
    For the Rice
  • Step 01

    Place the chicken, bay leaves and salt in a large pan and cover with cold water. Bring to boil then simmer until the chicken is partially cooked.
  • Step 02

    Remove the pieces of chicken and keep warm. Reserve the liquid as a base for stock or soup. In a large pan, heat the oil and add the onion, garlic and fry the onions until they are golden brown and then add lemon juice and chilly powder.
  • Step 03

    Add the vinegar, ginger and sugar and simmer until the sugar dissolves and the oil has separated from the masala.
  • Step 04

    Return the chicken pieces to the pan and add the garam masala. Mix well, then reheat until the masala clings to the pieces of chicken and the gravy is thick.
  • Step 05

    Adjust the seasoning if necessary. If you prefer thinner gravy, add a little of the reserved stock. Serve hot with rice.
