|1-1.25 kg||Real Good Chicken, jointed and skinned|
|1/3 cup||vegetable oil|
|8 medium||onions, finely chopped|
|3 tbsp||garam masala powder|
|5-6 cloves||garlic, finely chopped|
|3 tbsp||red chilly powder|
Step 01Place the chicken, bay leaves and salt in a large pan and cover with cold water. Bring to boil then simmer until the chicken is partially cooked.
Step 02Remove the pieces of chicken and keep warm. Reserve the liquid as a base for stock or soup. In a large pan, heat the oil and add the onion, garlic and fry the onions until they are golden brown and then add lemon juice and chilly powder.
Step 03Add the vinegar, ginger and sugar and simmer until the sugar dissolves and the oil has separated from the masala.
Step 04Return the chicken pieces to the pan and add the garam masala. Mix well, then reheat until the masala clings to the pieces of chicken and the gravy is thick.
Step 05Adjust the seasoning if necessary. If you prefer thinner gravy, add a little of the reserved stock. Serve hot with rice.
