1 kgReal Good Chicken, cleaned and cut
3 tbspghee
30red chillies (20 Madrasi and 10 Kashmiri)
3 tbspcoriander seeds
1 tbspcumin seeds
1 tspfenugreek seeds
¼ tspthyme (optional)
20garlic flakes
1 tspturmeric powder
1 piecetamarind (size of a small lime)
fresh coconut, grated
3 tspred chilly powder
3onions, chopped
1 tspbutter
2 cupswater

Here is a fabulous recipe for Dry Chicken with Coconut.
  • Step 01

    Heat a tablespoon of ghee in a pan.
  • Step 02

    Fry red chillies, coriander seeds, cumin seeds, fenugreek seeds, thyme, peppercorns and grind in a stone grinder or mixer along with 7-8 garlic flakes, turmeric powder and tamarind to a fine paste.
  • Step 03

    Remove the masala and keep aside.
  • Step 04

    On the same stone, add grated coconut, 11-12 garlic flakes, 1 tbsp. cumin seeds and grind coarsely without water.
  • Step 05

    In a thick bottomed pan, add the chicken, finely ground masala, two sliced onions, butter, and water, salt to taste and simmer till cooked.
  • Step 06

    Add the coconut and keep it on a slow fire till it becomes dry. Heat 2 tbsp. ghee in a pan and add 1 chopped onion. Fry till dark brown, pour the curry over the seasoning, cover and remove from the fire.
