|1 kg||Real Good Chicken, cleaned and cut|
|30||red chillies (20 Madrasi and 10 Kashmiri)|
|3 tbsp||coriander seeds|
|1 tbsp||cumin seeds|
|1 tsp||fenugreek seeds|
|¼ tsp||thyme (optional)|
|1 tsp||turmeric powder|
|1 piece||tamarind (size of a small lime)|
|1½||fresh coconut, grated|
|3 tsp||red chilly powder|
Step 01Heat a tablespoon of ghee in a pan.
Step 02Fry red chillies, coriander seeds, cumin seeds, fenugreek seeds, thyme, peppercorns and grind in a stone grinder or mixer along with 7-8 garlic flakes, turmeric powder and tamarind to a fine paste.
Step 03Remove the masala and keep aside.
Step 04On the same stone, add grated coconut, 11-12 garlic flakes, 1 tbsp. cumin seeds and grind coarsely without water.
Step 05In a thick bottomed pan, add the chicken, finely ground masala, two sliced onions, butter, and water, salt to taste and simmer till cooked.
Step 06Add the coconut and keep it on a slow fire till it becomes dry. Heat 2 tbsp. ghee in a pan and add 1 chopped onion. Fry till dark brown, pour the curry over the seasoning, cover and remove from the fire.
