|1 kg||Real Good Chicken with skin (broiler)|
|3 tbsp / 50 gm||salted butter (room temperature)|
|½ tsp||fennel (saunf), pounded coarsely|
|1 tbsp||parsley, chopped|
|1 sprig||fresh thyme, slightly crushed|
|1 sprig||fresh rosemary, chopped|
|15||black peppercorns, crushed|
|4 medium||onions, peeled and cut into 6 wedges length-wise|
|1 clove||garlic, peeled|
|5 ml||olive oil|
Step 01Clean the chicken and pat it dry. Mix the fresh herbs, fennel, salt, pepper and butter.
Step 02Spread this herb butter under the breast skin and the thigh skin. Rub the remaining butter all over the chicken. Leave for 1 hour, 30 minutes in the fridge.
Step 03Mix onion wedges and garlic cloves with olive oil and salt. Line the bottom of the roasting pan with onion and garlic. Place the chicken over it with the breast side up.
Step 04Roast in a pre-heated oven at 180°C for 30 minutes or till cooked.
Step 05When the chicken is cooked, joint the legs and the breasts and serve with the onions and garlic from the roasting pan, with garlic toast.
Let the chicken stand for 15 minutes before serving, keeping it covered with foil to prevent drying.
