Step 01Wash the breasts and cut each into three strips. Salt and marinate in the lime juice and black pepper and set aside.
Step 02Half an hour before serving the meal, boil the cut chicken in 2 cups of water. When the chicken is tender, drain the soup and set it aside to make the gravy.
Step 03Heat the saffron over a skillet and when crisp, powder it over a half cup of warm water. Place 3 tbsp.of butter in a heavy based frying pan over medium heat and add the dried spices and the chicken and allow to simmer over a very low fire.
Step 04Take another saucepan and add two tablespoons of butter. Add the cornflour and mix vigorously. Then add saffron water and 2 cups of chicken soup. Keep stirring the sauce non stop till you achieve a smooth glossy sauce. If using the green peppercorns add them now carefully.
Step 05Take a long, flat dish & place the warm chicken pieces on it. Pour the saffron sauce carefully over them. Serve at once.
