|150 gm||tomatoes, blanched and chopped|
|100 gm||mushrooms, halves|
|100 gm||onions, chopped|
|10 cloves||garlic, chopped|

For the Stuffing
Step 01Slit the breasts, apply salt and pepper and set aside. Blanch spinach and chop finely. Heat oil in a pan, Add salt, chopped garlic and chopped onions and sauté. Add sliced mushrooms and spinach. Allow to cook and dry.
Step 02Add seasoning, and stir in cheese till it melts and thickens the mixture.
Step 03Stuff the chicken breasts with this mixture and roast over a charcoal grill or in an oven till cooked.
For the Red Wine Sauce
Step 01Heat butter in a pan, sauté garlic and chopped onions. Add blanched and chopped tomatoes and flour. Cook well. Add chicken stock and mushrooms and cook. When a little thick, add the red wine and season well.
Step 02Add the roasted chicken breasts to this gravy and simmer for 10 minutes.
Step 03Serve with garlic bread or herb bread and a glass of good red wine.
For cooking use a dry red wine, never a sweet red wine.
