Ingredients

1 kgReal Good Chicken
400 mlstock
1leek
2 stickscelery
¾ cup double cream
As requiredsalt
As requiredpepper
5 nosparsley stalks
¼ cupdry white wine
For the Stock
1onion
2cloves
1bouquet garni
1 stalkcelery, sliced
1leek, sliced
750 mlwater
Here is a lip-smacking recipe for Waterzooi De Poulet.
  • Step 01

    Prepare the stock and bring to a boil.
  • Step 02

    In this stock, poach the chicken until three quarters cooked. (Stock should just simmer through the cooking). Remove the chicken and strain the stock.
  • Step 03

    Cut the leek, celery and parsley stalks into juliennes. Place the juliennes in a saucepan and moisten with dry white wine and boil till all the liquid has evaporated. Add the chicken stock.
  • Step 04

    Cut the chicken into 8 pieces and simmer in the above liquid until the chicken is cooked. Remove the chicken pieces and the vegetables with a slotted spoon.
  • Step 05

    Add the cream to the cooking liquid and reduce to a smooth sauce on a slow fire. Check the salt.
  • Step 06

    Put the chicken and the vegetables back into the sauce and serve hot with bread and butter.
