|1 kg||Real Good Chicken for frying, skinned and jointed|
|5 large||onions, sliced fine|
|3||green chillies, slit|
|1 tbsp||fresh ginger, peeled and minced|
|1 tsp||freshly ground black pepper|
|1 cup||hot water|
|2 large||potatoes, cut lengthways and cooked in salt water|
|1 tsp||baking powder|
Step 01In a heavy based pan over moderate heat, put ghee. When hot, Add onions and fry until crisp and golden brown. Removefrom pan and set aside. Lower heat and place green chillies and ginger in the pan; fry until fragrant.
Step 02Add chicken and continue frying. Sprinkle with pepper and salt to taste. Place 1 cup hot water in the pan, cover and allow the chicken to cook over low heat until tender.
Step 03This is a dry dish, and there should be little or no gravy in the pan. Remove from heat. Place skillet over moderate heat and fry potatoes crisp and golden.
Step 04Place Country Captain on serving dish, arrange potatoes around and garnish with fried onions.
Step 05Country Captain is excellent when accompanied by a side dish of cabbage, or cauliflower foogath. Chapatis, or a loaf of bread complete the meal.
