1 kgReal Good Chicken, joint and seasoned
150 gmmushrooms
2shallots (Madras onions)
6 tbspwhite wine
1 tbsptomato purée
20 mlbrandy
1 tbspchopped tarragon
100 gmbacon
2 tbspolive oil
1 tbspbutter
1 mediumtomato, blanched and quartered
As requiredsalt and pepper
As requiredparsley
Here is a delicious recipe for Sautéed Chicken Chasseur.
  • Step 01

    Sauté the chicken in a skillet in a mixture of oil and butter.
  • Step 02

    Cover and cook for about 20 minutes. Add to this, thinly sliced mushrooms and cook further for about 10 minutes.
  • Step 03

    Remove the chicken from the pan and keep it hot. In the same pan, sauté the bacon and peeled shallots in the pan juices and add the tomato purée and white wine.
  • Step 04

    Cook the sauce till it is reduced by half and then add a glass of brandy, tomatoes and the tarragon.
  • Step 05

    Cook the sauce till it boils and then pour over the chicken.

    Season with salt & pepper, sprinkle with parsley and serve hot.
