|1 kg||Real Good Chicken, joint and seasoned|
|2||shallots (Madras onions)|
|6 tbsp||white wine|
|1 tbsp||tomato purée|
|1 tbsp||chopped tarragon|
|2 tbsp||olive oil|
|1 medium||tomato, blanched and quartered|
|As required||salt and pepper|
Step 01Sauté the chicken in a skillet in a mixture of oil and butter.
Step 02Cover and cook for about 20 minutes. Add to this, thinly sliced mushrooms and cook further for about 10 minutes.
Step 03Remove the chicken from the pan and keep it hot. In the same pan, sauté the bacon and peeled shallots in the pan juices and add the tomato purée and white wine.
Step 04Cook the sauce till it is reduced by half and then add a glass of brandy, tomatoes and the tarragon.
Step 05Cook the sauce till it boils and then pour over the chicken.
Season with salt & pepper, sprinkle with parsley and serve hot.
